01 - 1 sheet thawed puff pastry
02 - 7 oz Brie cheese with rind, sliced

03 - 1/2 cup fresh pomegranate seeds
04 - 1/4 cup fresh parsley leaves
05 - 1/4 cup fresh rosemary sprigs

06 - 1 beaten egg (for egg wash)
07 - 1 tablespoon honey
08 - 1/4 cup chopped pecans or walnuts (optional)
09 - Freshly ground black pepper, to taste
# Method:
01 - Set the oven to 400°F and line a large baking sheet with parchment paper.
02 - Unroll the puff pastry and cut an 8-inch circle, then cut a 4-inch circle from its center to form a wreath shape.
03 - Place Brie slices evenly on the wreath base, leaving a small border around the edge.
04 - Sprinkle half of the pomegranate seeds and all chopped nuts, if using, over the Brie slices.
05 - Fold the pastry edge over the filling, pinching gently to secure, then brush the entire pastry surface with beaten egg.
06 - Bake for 15 minutes or until the pastry is puffed and golden brown.
07 - Remove from oven, drizzle with honey, and season with freshly ground black pepper.
08 - Allow to cool slightly, then garnish with parsley, rosemary sprigs, and the remaining pomegranate seeds. Serve warm or at room temperature.
